Bear Naked® Triple Berry Fit Granola Yogurt Parfait

Ingredients

Triple Berry Granola Cookies

  • 7.5 oz. Bear Naked® Triple Berry Fit Granola
  • 2 oz. Gluten-free flour
  • 1 oz. Vegan soy butter
  • 2.5 oz. Brown sugar
  • 2 oz. Maple syrup

Directions

1. In a 12 oz. clear compostable parfait cup, place 2 oz. of berries in the bottom followed by 6 oz. of coconut yogurt.
2. Gently place a Triple Berry Granola Cookie in the cup, making sure it rests above the yogurt.
3. Place about 2 oz. of Bear Naked Triple Berry Granola on top of the cookie.
4. Place a lid on top of the parfait and reserve until ready to serve.

Triple Berry Granola Cookies:
1. Preheat oven to 275° F.
2. Mix together the Bear Naked® Triple Berry Fit Granola and gluten free flour.
3. In a pot, combine the soy butter, brown sugar, and maple syrup and bring to a simmer.
4. Pour over the granola and mix until evenly coated.
5. Spread out onto a parchment paper lined sheet pan and place another piece of parchment paper over top. Roll out with a rolling pin until the mixture is evenly spread on the sheet pan and is about ¼” thick.
6. Bake for about 15-20 minutes. Remove from oven and immediately cut into circles using a ring cutter then is slightly smaller than the size of the top of the parfait cup.
7. Allow the cookies to cool to room temperature.
