Bear Naked® Triple Berry Granola & Spinach Salad

Baby spinach, sliced strawberries, blueberries, radishes, almonds and avocado tossed with Poppyseed dressing, topped with Feta Cheese Crumbles and Sea Salted Bear Naked® Triple Berry Granola.

Servings: 1 entrée salad or 2 appetizer salads

Ingredients

  • SEA SALTED BEAR NAKED® TRIPLE BERRY GRANOLA
  • 1 lb. Bear Naked® Triple Berry Granola
  • 3 bursts Avocado Oil Spray or other Vegetable Oil Pan Spray
  • 1/2 tsp. Sea Salt, fine ground
  • SALAD INGREDIENTS
  • 1/2 cup Strawberries, washed, sliced, stems removed
  • 2 tbsp Blueberries, washed
  • 2 tbsp Radishes, washed, sliced thickly
  • 1/4 cup Avocado, diced 1/2” chunks
  • 3 cups Baby Spinach Leaves, cleaned
  • 2 tbsp Almonds, sliced
  • 1/4 cup Sea Salted Bear Naked® Triple Berry Granola
  • 1 oz. Poppyseed Dressing (or other favorite dressing)
  • 2 tbsp Feta or Goat Cheese, crumbles
  • Avocado Oil Spray or other Vegetable Oil Pan Spray

Directions

SALAD PREPARATION INSTRUCTIONS:
1. Prepare sea salted triple granola according to separate recipe.
2. Wash, slice and dice strawberries, blueberries, radishes, and avocado.
3. In a stainless steel mixing bowl large enough to toss salad in, place spinach leaves, strawberries, blueberries, almonds, 3 tbs. of the granola, and poppy seed dressing. Toss gently to blend so all leaves are lightly coated with dressing.
4. Using tongs pick up and pile the salad into serving bowl in a tall heap. Be sure to pile spinach leaves first and scrape/pour other ingredients over leaves for best presentation.
5. Garnish top of salad with Feta (or goat cheese) crumbles, diced avocado and the remaining 1 Tbs. of the sea salted Bear Naked® Triple Berry Granola.
6. Optional Serving Suggestions: add a grilled chicken breast, or choice of protein.
SEA SALTED BEAR NAKED® TRIPLE BERRY GRANOLA PREPARATION:
1. Place granola in a mixing bowl large enough to be able to toss and blend granola.
2. Spray granola with several bursts of avocado oil pan spray, tossing granola between sprays to coat.
3. Add sea salt and toss again well to blend salt with granola.
