Caramel Popcorn with Bear Naked® Triple Berry Fit Granola

Ingredients

  • ¾ cup Brown sugar
  • 6 Tbs. Vegan butter
  • 3 Tbs. Corn syrup
  • ¼ tsp. Iodized salt
  • ¼ tsp. Baking soda
  • ¼ tsp. Vanilla extract
  • 8 cups Popcorn, popped
  • 2 cups Bear Naked® Triple Berry Fit Granola

Directions

1. Preheat oven to 275° F
2. In a pot, combine the brown sugar, vegan butter, and corn syrup; bring to a simmer and cook for 1-2 minutes.
3. Add the salt, baking soda, and vanilla extract, stir to combine, and remove from heat.
4. Pour the caramel sauce over the popcorn and mix gently until evenly coated.
5. Spread the popcorn out onto parchment paper lined sheet pan and bake for 6-8 minutes.
6. Remove the pan from the oven and pour the granola over the popcorn and gently mix it in. Place it back in the oven and bake for an additional 2-3 minutes.
7. The best way to tell if the popcorn is done is to carefully remove a piece from the pan, and allow it to cool for about 30 seconds. If it is still sticky, return to the oven for another minute or two.
8. Remove the pan from the oven and allow the popcorn to cool to room temperature before serving.
