Cocoa Banana Muffins

  • 1 3/4 quarts all-purpose flour
  • 2 1/2 cups sugar
  • 1 1/2 teaspoons salt
  • 1/4 cup baking powder
  • 1 1/2 teaspoons baking soda
  • 1 1/2 cups unsweetened cocoa powder
  • 1 1/2 quarts Kellogg's® All-Bran® Original cereal
  • 4 1/2 cups skim milk
  • 10 egg whites
  • 3/4 cup vegetable oil
  • 1 1/2 quarts ripe bananas, sliced


1. Preheat oven to 400º F.
2. Combine flour, sugar, salt, baking powder, baking soda, and cocoa. Set aside.
3. Combine Kellogg's® All-Bran® cereal and milk in mixer bowl. Let stand about 3 4. Add egg whites and oil. Mix on low speed, with flat beater attachment, until all ingredients are well combined. Stir in bananas. Add dry ingredients, mixing on low speed only until combined.
5. Using No. 12 scoop, portion batter into 2 3/4-inch muffin pan cups coated with cooking spray. Bake at 400º F about 20 minutes or until lightly browned.
6. Serve with warm coffee sauce.
Coffee Sauce:
1. In 4-quart saucepan, stir together sugar and flour. Gradually add milk and coffee, stirring until smooth.
2. Cook over medium heat, stirring constantly, until mixture starts to boil. Continue cooking and stirring 1 minute longer.
