Creamy Mac & Cheese With Parmesan Crunch Topping

Ingredients

  • 3 quarts (32 ounces) whole wheat rotini pasta (about 4 cups)
  • 1/2 cup (2 ounces) all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon ground mustard
  • 1 quart 1 pint (48 fl. ounces) fat-free milk, divided
  • 1 package (8 ounces) reduced-fat cream cheese, cut up
  • 1 quart (16 ounces) shredded sharp Cheddar cheese
  • 1 pint 1 cup (12 ounces) shredded American cheese
  • 1/2 cup (2 ounces) sliced green onion (optional), fresh
  • 1 quart 1 pint (6 ounces) Kellogg's Rice Krispies cereal
  • OR
  • 1 quart 1 pint (6 ounces) Kellogg's® Rice Krispies® Whole Grain
  • 1 1/3 cups (9 2/3 ounces) finely shredded or grated Parmesan cheese

Directions

1. Cook pasta according to package directions. Drain. Keep warm.
2. Meanwhile, in a large saucepan stir together flour, salt, pepper, and mustard. Whisk in 1/2 cup of the milk, forming smooth paste. Gradually whisk in remaining milk.
3. Add cream cheese. Cook and stir over medium heat until thickened and boiling. Remove from heat.
4. Gradually stir in Cheddar cheese and American cheese, a little at a time, until melted. Fold in pasta and cereal.
5. Spread in two 2” hotel pans with cooking spray. Sprinkle with cereal and Parmesan cheese.
6. Broil 4-5 inches from the heat, about 3 minutes or until crisp.
