Pina Colada Peach Pie

Ingredients

  • 5 cups Kellogg's® All-Bran® Original cereal
  • 3/4 cup granulated sugar
  • 1 tablespoon cinnamon
  • 1 cup butter, melted
  • 3 teaspoons pineapple juice
  • vegetable cooking spray
  • 3 packages (3.4 oz) vanilla instant pudding
  • 4 1/2 cups Half & Half cream
  • 1 1/2 teaspoons pineapple flavoring
  • 1 1/2 teaspoons coconut flavoring
  • 1 1/2 teaspoons rum flavoring
  • 3 cans (15.5 oz each) sliced cling peaches, drained and chopped
  • 3 cans (8 oz) pineapple, crushed, drained
  • 6 teaspoons toasted coconut

Directions

1. Preheat oven to 350º F.
2. Combine Kellogg's® All-Bran® cereal, sugar, cinnamon, butter, and pineapple juice. Portion 1/3 of the mixture (approximately 10 oz.) into each of three 9-inch pie pans coated with cooking spray. Spread to form crust.
3. Bake at 350º F about 12 minutes until firm. Cool completely.
4. Prepare pudding according to package directions using Half & Half in place of milk. Stir in flavorings, peaches, and pineapple.
5. Portion equally into cooled crusts. Chill about 2 hours or until set.
6. Serve garnished with toasted coconut, whipped topping and additional peach slices, if desired.
