Pineapple Blues

Servings: 50 (6 ounce servings)

Ingredients

  • 1 gallon 1/2 cup (50 ounces) pineapple chunks, fresh
  • 1 gallon 1 1/2 cups (50 ounces) blueberries, fresh
  • 1 cup 2 tablespoons (25 ounces) maple syrup
  • 1 gallon 2 quarts 1 cup (200 fl ounces) vanilla yogurt
  • 3 quarts 1 pint 1/2 cup (50 ounces) Kellogg's® Low Fat Granola Without Raisins

Directions

1. Preheat oven to 450° F.
2. Place pineapple chunks onto cooking sheet and roast in the preheated oven at 450° F for 10 minutes on each side.
3. Remove from oven and set aside until cool.
4. In a mixing bowl, fold together roasted pineapple chunks, blueberries. and syrup. Cover and refrigerate for 2 hours.
5. Build parfait by alternating layers of vanilla yogurt, Kellogg's® Low Fat Granola with Raisins, and pineapple/blueberry in a 6 ounce parfait cup.
4. Hold cold at 40° F per HACCP guidelines and for no longer than 6 hours to prevent granola from becoming soggy and pineapple from browning.
