Raisin Bran Muffins

Products Used: Kellogg's Raisin Bran® Original cereal
Servings: 24 muffins


  • 2 tablespoons sugar
  • 1 teaspoon cinnamon
  • 3 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon salt
  • 2 tablespoons baking powder
  • 6 cups Kellogg’s Raisin Bran® cereal
  • 2 1/2 cups skim milk
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 cup semi-sweet mini chocolate morsels


Oven Preparation
1. Preheat oven to 400 °F.
2. In large mixing bowl, combine the sugar and cinnamon. Set aside for topping.
3. Stir together flour, the cup sugar, salt and baking powder. Set aside.
4. In large mixing bowl, combine cereal and milk. Let stand about 2 minutes or until cereal softens.
5. Add egg, oil, and chocolate morsels. Beat well. Add flour mixture, stirring only until combined. Portion evenly into twenty four 2 1/2-inch muffin-pan cups coated with cooking spray. Sprinkle evenly with sugar-cinnamon topping.
6. Bake at 400°F for about 20 minutes or until lightly browned. Serve warm.

Microwave Preparation
1. Prepare as above. Portion 1/4 cup batter into 24 paper-lined custard cups. Sprinkle with sugar-cinnamon topping.
2. Arrange 6 cups on microwave-safe plate in center of microwave.
3. Cook on HIGH 2 minutes. Rotate the plate 1/4 turn and cook on HIGH 1 minute longer.
4. Carefully remove muffins from microwave with hot pads and place on wire rack. Repeat with remaining muffins. Let stand on wire rack 5 minutes before serving.
