Roasted Pineapple & Blueberry Parfait

Products Used: Kellogg's® Low Fat Granola Original (without Raisins) Multi-Grain cereal
Servings: 1



1. Preheat oven to 450° F.
2. Peel and core fresh pineapple. Cut into 1/2" slices. Place slices onto cooking sheet and roast in the preheated oven 450° F for 10 minutes on each side. Remove from oven and set aside until cool. Dice into 1/4" pieces.
2. In a mixing bowl, fold together roasted pineapples, blueberries and syrup. Cover and refrigerate for 2 hours.
3. Build parfait by alternating and repeating layers of yogurt, granola and pineapple/blueberry mixture in a 4 oz. parfait cup.
4. Hold cold at 40° F.
